Chef Takuya Umeda is the owner and head chef of the Japanese fine-dining restaurant, UMEDA. He was originally inspired by the culinary art of sushi chefs that he experienced to pursue a career in Japanese cuisine by getting a job at a traditional sushi restaurant. In 1987, Chef Takuya continued to chase his dream of becoming the best sushi chef by traveling abroad to work at a renowned restaurant in London.
Through serendipitous events, Chef Takuya met the world-famous chef Nobu Matsuhisa during the opening of Chef Nobu’s first restaurant in Europe, Nobu London, and began working with him in 1997. To become a master chef in his own right, in 2003, Chef Takuya decided to move and work at Matsuhisa Beverly Hills to further refine his technique, creativity, and to find his own, unique style.
On March 30th, 2017, Chef Takuya finally made his dream a reality by opening his own sushi restaurant, UMEDA, named after his family name, on the famed street in Los Angeles, Melrose Avenue.
